I never knew that there was brown parchment paper until I started watching The Great British Baking Show. I’ve never had a problem with the white paper - but then I don’t do a lot of baking anymore. Mostly cookies and I use silicon sheets on those baking sheet pans.

We just go through short periods of wanting pretzels, donuts and such. Which is one of the reasons I don’t bother with making our own.
