Ditto. I love the Penzey’s Spice catalog. I especially love it because of the recipes. But then, I’m the kind of guy who reads cookbooks for entertainment.
I get great ideas from those Penzey’s recipes. Granted, they might be bland to my taste, but usually they’re great for my wife and family.

Note that I jazzed it up by using smoked ham hocks instead of diced ham. My wife and family love this during the coldest days of winter. Especially if you serve it with fresh-baked bread.
Again, I add more ‘umph’ to it with some onion. I also usually add sauteed mushrooms.
Get your chilis from Hatch, NM. It’s worth it. That little town is called the chili capitol of the US for a good reason.
I think the downside to using only powdered chili is that the flavor doesn’t mature. We had the leftovers tonight and it had gone flat. Still some chili taste, but all the heat was gone. That’s why I use chopped chilis and stew them for hours. They only get better the next few days after that.
