10 MINUTE NEVER FAIL MICROWAVE PEANUT BRITTLE
1 c. sugar
1/2 c. light corn syrup
1 c. raw peanuts (or cashews or pecans or...)
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2 minutes. Brittle should not get too brown. Stir in vanilla and soda until light and foamy.
Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.
Same recipe, just smaller size batch. Plus the vanilla. I’ve got a great microwave, but I almost never actually cook in it, other than those nukable vegetables. Heat stuff up, that’s about it.
While it looks yummy I have never been a hard candy fan, ever. Go figure as I have such a sweet tooth I gain 10 pounds just browsing the cookbook. Anyway - everyone here seems to be off their kibble - and so I am just going to do some choco chip cookies, brownies and a batch of zimsterne (which it isn’t Christmas to me without them - but alas I am the only one who eats them) - also maybe do another run of the flu cookies - as I said everyone seems off their kibble this year. Luckily we are headed to TN to see the new grandbaby and say goodbye to son off to Obama’s War - so I have an out for all the goodies I make.
I still cannot fathom as to why these people aren’t in the Christmas goodie mood - even my cake testers have decided to diet - heavens only knows (I still have two cakes to make and have to practice an Igloo & penguin cake) - what I’m going to do? I think I woke up in an alternative universe - as they can’t be related to me.
BTW - slightly off topic The Klingon War Bride and/or The Won will be on Food Network on Jan 3rd - I find it highly tacky that this moron has the need to be on every fr***in network - what is he going to do next - comment on an NFL game on ESPN? For someone who strikes me as perhaps the most vapid and shallow person alive - why? Turns me off Food Network that they feel to this level of pandering. It is a shame.
BTW speaking of The Won - Michelle Malkin has a great video - a rap on The Nobel. Very funny indeed. I think that there is beginning to be buyers remorse when people feel comfortable making fun of The Won and just yesterday 50% of a poll would rather have Bush serving another term than Obama.
