  2. delicious! I have pictures of tuna caught in the gulf back in the 50’s with fish that make that one look like a minnow. 2,000 lb monster blues.. I wonder what happened to them.

    You can have tempura if you don’t want the sushi Rich, no one will make fun of you.. Though, I may sit there and snicker.

  3. I went more than half my life without ever having sushi. Then when I did try it, it was a bit of a challenge to get past that “eww ick, raw fish” stage. Now? For tuna, salmon, and mackerel at least, I prefer it fresh and raw. A little soy sauce, perhaps a dab of wasabi, and I’m good to go. Nothing wrong with a little tempura either, but just a few pieces on the side.

    Fresh raw salt water fish does not have that fishy taste or aroma. For the stronger tasting fish, like bluefish, that’s the only way to eat them. Cooking them anything more than a fast searing of the outside, changes their natural oils and brings out that stank. It also toughens the meat. No thanks. A good piece of tuna, either deep red or the white kind, will literally melt in your mouth, no chewing necessary.

    But I will admit that the odder kinds of sushi, like boiled baby octopus with their heads stuffed with sesame and ginger, or those mushy springtime “amaebi" shrimp, are an acquired taste, especially when you eat the crunchy head with the eyes and feelers left on. OTOH, I could eat broiled eel with brown sauce 4 times a day forever and be happy.
