Hickory and mesquite seem to be well entrenched, but apple wood is the smoke of the G-d’s. I also like some oak whiskey barrel smoke. The weber box looks a little pricey for me. I use a cheap cast Iron box I got at home depot for a lot less. It is falling apart now, but I got it five years ago so who cares. My coworker is crazy about smoking ribs, buts you name it. He is always working on new ways to get the job done, even building a custom wood smoker controller that opens and closes the dampers on his home made smoker to control the temp. His favorite smoker wood is a fresh branch off of a cherry or apple tree. Now you got me ready to go to sams club and get a fresh rack and get it going.
Good; in that case my job here is done.
I’m having 4 ribs reheated for lunch, with a side of take out pork fried rice. A nice big squirt of Sriracha sauce puts some zip back into the flavor.
PS - the ribs came out perfectly. Even the rib tips were fall-apart tender and tasty.
You betcha; applewood here I come. For now, I’ll keep making my tinfoil smoke packets. They work, and they cost next to nothing.
